Southern Sausage Apple Bake

I’ve had my eye on this recipe since I saw it last week in the Dinner Challenge pool.

Ingredients

4apples –peeled and thinly sliced
1tablespoonolive oil
1poundturkey kielbasa –sliced 1/4″ thick
10.5ouncescorn muffin mix –(2 boxes)
1cupmilk

Directions

  1. Preheat oven to 400.
  2. Place apples in a pot that has been drizzled with olive oil. Cook for 10 minutes on medium heat, stirring occassionally.
  3. In a medium bowl, combine cornbread mixes with the milk, stirring well.
  4. Once the apples are done, pour them and their juices in a 9×13″ baking pan. Add the kielbasa and distribute evenly throughout the pan. Pour the cornbread mixture over the top, gently spreading around with a spatula.
  5. Place pan in the oven, and cook for 20 minutes (or until top is lightly golden).

I wasn’t entirely sure I’d be able to sell this meal to the boys, so I only prepared half of the recipe as directed.  The other half of the ingredients I made separately.  Eamonn ate everything, which is always a nice suprise.  Aidan only ate the apple, which was not a surprise in the least icon_rolleyes-flickr-10.

My thoughts on this recipe?  I liked it, but I don’t think I’d make it again as written.  I’d probably leave the apples out – I wasn’t fond of the sweetness (or the mushy slime factor) of cooked apples in the corn bread.   If nothing else, making this tonight has reminded me how much I like corn bread.  I have to remember to have a couple of mixes on hand for when the whim strikes.  I hear Trader Joe’s has a killer corn bread mix…

  1. I agree, I like my cornbread more salty/spicy than sweet.

    But good for you for trying something new. 2 thumbs up!

    & I have one child who would have to have it all seperate, too!

    1. I’ve been trying to try something new on a weekly basis. It’s been fun adding to my repertoire, which had gotten pretty stale. I’m surprised at what E will eat – he’s a lot more adventurous than I give him credit for. He doesn’t always like it, but he will nearly always try it. On the other end of the spectrum is A, who will have teary hysterics for 1/2 hour before putting a few grains of rice in his mouth. That one may never be weaned off of Pop Tarts and frozen waffles, much as I wish he would be…

    1. I pan fry ’em. If I had a working grill I’d love them BBQ’d, too. Any method that gets them browned is good in my book.

      I love hot dogs, but the idea of boiling them makes me gag. And makes me nostalgic for Thanksgiving at Granny’s house. Yeah, I was a picky eater as a kid and I didn’t like Turkey. She boiled me hot dogs for Thanksgiving dinner every year until she’d finally had enough and said, “I don’t care if she doesn’t like it, she’s having Turkey like the rest of us!” Good thing she put her foot down, or I’d still be eating hot dogs on Thanksgiving. But they wouldn’t be boiled 😉
