Summer Berry Muffins

Definitely had a more “balanced” day today than I have been having. A little bit of computer biz work in the morning, a little bit of housework that wasn’t as painful as I’d been thinking it would be (listening to podcasts is my favorite trick for helping the time pass quickly during a tedious task and I found a new one today), a little bit of farmer’s marketing, and a little bit of after-supper muffin-making.

After supper is usually my blogging time (or my time for some other kind of geek-fest), so it’s a bit unusual for me to be pulling out the mixing bowl and defrosting my berry stash, but what can I say? I was feeling inspired. The thought of starting my next several mornings with a delicious fresh-baked treat was just too enticing to ignore!

Plus, I’d found a blueberry muffin recipe today that I’d wanted to try 😀

Summer berry muffins

I made some changes to the recipe to allow for the fact that I was low on white sugar, and out of cinnamon. Plus, I wanted to use some of the blackberries I got at the farmer’s market today and some of the wineberries from my yard that I froze last month. Here’s the resulting Summer Berry Muffins recipe:

INGREDIENTS

  • 1/2 cup sugar
  • 1/4 cup brown sugar
  • 1/4 cup oil
  • 1 egg
  • 2 cups flour
  • 1 teaspoon salt
  • 3 teaspoons baking powder
  • 1/2 teaspoon apple pie spice
  • 1 1/4 cups 2% low-fat milk
  • 1 cup blueberries
  • 1/2 cup blackberries
  • 1/2 cup wineberries

DIRECTIONS

  1. Beat together sugars, oil and egg. Add dry ingredients and milk. Fold in berries.
  2. Bake for 25 minutes at 375.

NOTES

  • These could be made with any combination of berries totaling two cups, if you don’t have these exact berries (I’m guessing most people don’t have a supply of wineberries handy).

I won’t have a final verdict on these muffins until I’m enjoying one over my morning tea tomorrow, but if the muffin top I nibbled on while they were cooling is any indication, they’re going to fit the breakfast bill very nicely. [edited to say: It’s morning, I’m breakfasting, and they’re quite good!]

    1. Oh, I should have mentioned that the wineberries grow wild in my yard, and that you can substitute any other kind of berry (like raspberries). I think I’ll go back and edit the post – thanks for inadvertently reminding me 😀

    1. That’s why I made them – I like my FiberOne bar alright, but I could really love a muffin, LOL!

  8. Yum Yum! Also, thank for sharing the blueberry recipe too! I have a whole container sitting in the fridge from Costco…they are just so much more sour than the local farmer’s market…going to make muffins with them! =)
