Southern Sausage Apple Bake

I’ve had my eye on this recipe since I saw it last week in the Dinner Challenge pool.

Ingredients

4 apples –peeled and thinly sliced
1 tablespoon olive oil
1 pound turkey kielbasa –sliced 1/4″ thick
10.5 ounces corn muffin mix –(2 boxes)
1 cup milk

Directions

  1. Preheat oven to 400.
  2. Place apples in a pot that has been drizzled with olive oil. Cook for 10 minutes on medium heat, stirring occassionally.
  3. In a medium bowl, combine cornbread mixes with the milk, stirring well.
  4. Once the apples are done, pour them and their juices in a 9×13″ baking pan. Add the kielbasa and distribute evenly throughout the pan. Pour the cornbread mixture over the top, gently spreading around with a spatula.
  5. Place pan in the oven, and cook for 20 minutes (or until top is lightly golden).

I wasn’t entirely sure I’d be able to sell this meal to the boys, so I only prepared half of the recipe as directed.  The other half of the ingredients I made separately.  Eamonn ate everything, which is always a nice suprise.  Aidan only ate the apple, which was not a surprise in the least Rolling Eyes.

My thoughts on this recipe?  I liked it, but I don’t think I’d make it again as written.  I’d probably leave the apples out – I wasn’t fond of the sweetness (or the mushy slime factor) of cooked apples in the corn bread.   If nothing else, making this tonight has reminded me how much I like corn bread.  I have to remember to have a couple of mixes on hand for when the whim strikes.  I hear Trader Joe’s has a killer corn bread mix…
